Ynyshir Hall has long been a leading light in Welsh cooking and it has achieved this by aiming to offer a restaurant that is not only outstanding in Wales but measures up to the best international standards. The fact that they have managed this is no mean achievement and with the latest in a short list of talented chefs that have graced Ynyshir’s kitchen they have found a real gem in the compact shape of Adam Simmonds.
With a background working under the likes of Raymond Blanc, Paul Heathcote and Jean Christophe Novelli, Simmonds has some pedigree and it shines through in cooking that is precise, pinpoint accurate and at time very innovative. It’s not wild and whacky stuff though, more a variation on the fairly classic that results in dishes like poached fillet of brill with wild garlic leaf panacotta and morels or an exquisite dessert of ginger parfait, green tea jelly and coconut. As one would expect the balance, lightness of touch, and depth of flavour achieved is truly outstanding. There is a long and serious wine list that does justice to the heights of the cooking but it’s nicely balanced so that one doesn’t have to dig too deep if not inclined.
