Nearly two decades into its existence, Plas Bodegroes remains a must destination for culinary pilgrims coming to Wales. In many ways, Chris Chown has been a pioneer in the development of Welsh cooking, being amongst the first to make a real campaign of using quality Welsh produce in a standard of cooking that compares well with the best in the UK.
The dining room is crisp and elegant in that country house hotel way, but with a touch of modernity about it too. Much the same goes for the food – beautifully crafted and with a classical bent, but also with a lightness of touch and deceptive simplicity that gives the dishes a contemporary fell too. Shellfish tagliatelle with wild garlic, chargrilled ribeye of Welsh beef with oxtail sauce, roast turbot with lime hollandaise and asparagus are all representative of a menu which changes with the seasons. The wine list is a magnificent achievement with over 400 bins to choose from in a character packed selection.
