The cool interior design of the St David's extends to Tides restaurant which has the added attraction of wonderful views out onto Cardiff Bay. It’s a great venue and one which now seems to have found the ideal chef to do it justice in the shape of George Fuchs, formerly maitre chef des cuisines at the Savoy in London.
As one might expect from a man of his background there is plenty of the classic about the menu, but it’s all the better for that – asparagus might come simply with a poached egg, foie gras with a port jelly, rack of lamb with thyme, honey and baked onions. It’s simplicity at its best with a real understanding of flavour and a menu packed with Welsh produce and there’s also a grill offering (steak with béarnaise etc) to extend the choice yet further.
Main Course: braised belly of local pork, potato and grain mustard dauphinoise, creamed baby spinach, red onion and clove marmalade, parsnip crisps, red wine reduction.
Dessert: caramelised fig tart tatin, vanilla sauce anglaise, mascarpone sorbet.
