The Court Restaurant is very much at the centre of things at this lovely William and Mary style country house set in over 20 acres of landscaped parkland amidst the rolling countryside of Monmouthshire. In an area not short of quality places to eat, chef Steve Bennett has established has brought the hotel to the forefront of the area’s restaurants with some really accomplished cooking that reflects his background working with the likes of John Burton Race.
There’s a real effort to use the best of the local bounty and starters on the daily changing menu might include belly of pork from a local farm with paprika polenta and pickled vegetables. Similarly an assiette of lamb that teams fillet, breast, shoulder and tongue is sourced from neighbouring Raglan. Venison from Brecon is often on the menu, wild game is from local shoots on the Clytha and Llanarth Estates and fish is sourced from around the Welsh coast. Desserts are often imaginative reworkings of classic combinations resulting in the likes of caramelized brioche with apple, sage and brown butter ice cream. All this is delivered in a lovely country house setting with exquisite furnishings and the opportunity to enjoy the roaring fires of the lounges or the tranquil surroundings of the lawns depending on the timing of your visit.
